Karapau works with rare products, and therefore each item is treated as a specific product: with selection criteria, preparation methods, and conservation requirements that cannot be ignored. The goal is simple: to reduce doubts, align expectations, and guarantee consistency in the final result.
In this section you will find four basic products: Marinated Lamprey, Fresh Lamprey (not alive), Cooked Elvers, and Fresh Elvers (not alive). In each section we present the essentials — what the product is, how it should be preserved, and for what type of use it makes the most sense.

Lamprey in Marinade
Original Karapau product. Selected lamprey, cleaned, scraped and gutted, with roe, marinated in wine, salt, garlic and spices. Vacuum-packed and properly labeled, ready to cook and delivered to your home.
Boiled eels / eels
Original Karapau product. Selected and certified eels, cleaned, cooked and seasoned with salt and garlic. Vacuum-packed and properly labeled, ready to cook and delivered to your home.
Fresh Lamprey
Selected fresh lamprey, cleaned, vacuum-packed and properly labeled, delivered with a refrigeration unit (not alive). Suitable for chefs and kitchens experienced in handling and preparing this product.
